Matcha Ice Cream
for 4 person

Preparation time: 45 minutes
waiting time : 4 hours
cooking time : 30 minutes

for 4 person :

  • 25 g of matcha green tea powder
  • 120 g of granulated sugar
  • 20 cl of Milk
  • 150 g of crème fraîche
  • 3 Egg yolks
   

Step 1

Break the egg yolks
in a dish
and add sugar,
whip until
the mixture whitens.
Heat the milk in a pan.
Slowly add three-fourths
of the sugar &
egg yolk mixture,
stirring together well.

Pour the mixture
into a clean pan
and heat at a low temperature,
stirring constantly
until the preparation thickens.
Let the preparation
cool down in a bain marie
in a large container filled
with cold water. 
Continue stirring until
the temperature of the preparation
cools down.

Pour the warm milk
that was set aside
into a bowl and add the matcha,
whip until a uniform green color
is obtained.
Slowly pour
the matcha preparation
into the crème anglaise,
then add the crème fraîche,
stirring well.
Step 6

Pour into a square dish,
put in the freezer.
Every half hour, for 2-3 hours,
stir and scrape with a fork...
that the ice cream
doesn not crystallize.
